This book has been made possible through the support of Costco’s many food suppliers. As in past years, we’ve asked our suppliers to develop recipes that showcase their products that we sell at Costco. We have also included recipes from many of our favorite celebrity chefs such as Sandra Lee, Martha Stewart, Ina Gartner and Paula Deen in the “Chef’s Choice” section in the center of the book. These top chefs have worked their magic to develop recipes and tips using their favorite ingredients from Costco. Most of the recipes throughout the book have a short list of affordable, readily available ingredients and are quick and easy to prepare. This year, you’ll also find a new chapter, “Healthy Dishes.” It’s a perfect addi- tion since many of us are trying to adopt a healthier lifestyle for ourselves and our families. You can also find healthy recipes in other parts of the book. For example, in our “Chef’s Choice” chapter you’ll find healthy and delicious recipes from Jessica Seinfeld, Myra Goodman and Ellie Krieger. And yes, you can eat healthy and shop at Costco! We sell lots of fresh fruits and vegetables, lean meats, poultry, fish, nuts, olive oil, whole grain breads, whole wheat pasta and healthy snacks. You just can’t eat the whole package in one sitting! Of course, the secret to any great dish is using only top-quality ingredients. When you purchase your ingredients from Costco, you know that you are off to a great start. As Sandra Lee explains in her foreword on the next page, Costco does 70 percent of the work for you. We hope you enjoy In the Kitchen The Costco Way and try out our recipes with your family and friends. You can also find our past years’ cookbooks online at costco.com. Just type “Costco Cookbooks” in the search window on our home page. Bon appétit from all of us at Costco! My Grandma Lorraine would settle my sister Cindy in the front of the cart, with me standing eagerly in back, and off we’d go, wheeling up and down the aisles in search of bargains we could whip up into fun family meals. Over the years, Grandma taught me which foods were pantry staples, which ones were comfort foods and which ones were pure luxury. I learned that eating well was possible on any budget, if you’re thoughtful about the foods you buy and combine them creatively to make the ordinary extraordinary. All those trips to the store are among my most cherished childhood memories, so it seems fitting that they evolved into the cornerstone of my unique Semi- Homemade® philosophy. Quality convenience products have always been the main ingredient in my 70/30 formula: Mix 70 percent ready-made products with 30 percent fresh foods, add a dash of your own creativity and take 100 percent of the credit for a meal that’s fresh, fast and fabulous! I love Costco because it does 70 percent of the work for you. Choice cuts of meats, fresh fruits and vegetables, frozen foods and pantry staples put all the ingredients of a nutritious meal right at your fingertips. It’s a smart shopper’s dream: gourmet chocolates just begging to be melted into a silky sauce; exotic- tasting syrups and spices ready to layer into a rich marinade or a savory rub; scrumptious store-bought desserts waiting for your personal embellishments. Best of all, it’s right there in one place, everything you need to get a week’s worth of meals on the table fast. Think of cooking as a great adventure, filled with new things to try, new tastes to explore and new flavor combinations just waiting to be discovered. This cookbook,In the Kitchen The Costco Way, is the perfect place to start your explorations. Eat well. Live well. Cheers to a happy, healthy life! Costco member Sandra Lee’s latest books are Semi-HomemadeMoney Saving Meals, Desserts 2 and Fast-Fix Family Favorites. Sandra Lee In The Kitchen The Costco Way 7 p006.007_GinnieAndForeword.indd 7 8/20/08 1:12:07 PM About This Book I n the Kitchen The Costco Way is the seventh in our series of cookbooks designed to showcase the exciting array of foods sold at Costco. It is being distributed free to our members on a first-come, first-served basis the weekend after Thanksgiving as a token of our appreciation for their membership. In this year’s book we are proud to present two special features. The nutritional content of recipes developed by healthy-eating expert Devin Alexander or submitted by our food suppliers is included with the recipes in the “Healthy Dishes” chapter beginning on page 10. For our “Kitchen Basics” section (page 85), we asked the legendary Martha Stewart to suggest her Top 10 kitchen tools, basic bakeware and essentials for stocking the pantry. She also developed three recipes for our “Chef’s Choice” chapter (page 88) using our Kirkland Signature spices. Our popular “Chef’s Choice” chapter offers 30 pages of recipes developed by 10 of the country’s most accomplished chefs. All of these chefs have achieved national renown with cookbooks of their own, television shows and/or excep- tional restaurants. Thanks to all of them for helping to make this another excit- ing addition to The Costco Way cookbook series. The rest of the book is arranged in a simple and direct manner with sections for breakfast, appetizers, salads and soups, side dishes, entrées, desserts and beverages. The index at the back of the book contains listings by recipe and food item. We also have included a “Supplier Listing” section with contact information for all of the participating food suppliers. Every recipe in In the Kitchen The Costco Way has been identified with the supplier’s name and logo. We want to thank each of these suppliers for their support of this book. (Please note that some branded products may not be sold in your part of the country. In such cases, you should substitute a similar product.) I hope you will enjoy many wonderful meals using this book and that some of these dishes end up in your own collection of favorite recipes. David W. Fuller, Publisher Note on brands Many of the recipes in this book were submitted by companies that hold copyrights on the recipes and/or trademark applications/registrations on the brands listed in the recipes. Each of the companies represented in this book asserts its ownership of the trademarks, applications/registrations and copyrights it holds on its company name, brands or recipes. Trademark, application/registration and copyright symbols have been eliminated from the titles and text of the recipes by the publishers for design and readability purposes only. 8 In The Kitchen The Costco Way p008.009_AboutThisBook.indd 8 8/20/08 1:17:50 PM
